Ice-wine is a uniquely Canadian product that has been referred to as the “Nectar of the Gods.” Ice-wine was once used only as a dessert wine due to its sweetness, acidity, and complexity.
Now Canadian chefs also use it to make great dishes. Don’t make a trip to Canada without trying this “liquid gold.” Ice-wine is rare and difficult to produce and few countries have the proper conditions to produce it. The grapes hang past autumn until the temperature freezes.
The grapes continue to ripen and dehydrate and develop a distinctive taste profile. Ice-wine is often harvested in December or after a minimum of three days of consistently freezing temperatures. The diverse flavours of ice-wine come from the characteristics of each individual varietal grape.
